Nolen Gur, is a type of jaggery manufactured from the sap of the date palm tree and means “new jaggery” in Bengali. The tree’s unique beauty makes it so that it only produces this sap when the temperature drops, making the months of November to February the best period to gather jaggery. After the plant produces sap, it is reduced over a fire for hours to generate jaggery in three various consistencies: liquid, grainy, and solid.
